Cooking & Usage
Kabayaki: brush with a sweet soy glaze and grill until caramelised. Shirayaki: salt-grill simply to enjoy the natural flavour. For a hot pot, blanch the strips for around 10 seconds until just cooked through. Cantonese-style steaming with fermented black beans brings an authentic savoury finish.
